Basic Ingredients to be used for cooking scallops

  1. Fresh sea scallops, Side muscles removed
  2. Salt and pepper
  3. Virgin Olive oil
  4. Lemon wedges (optional)
  5. Fresh herbs (such as thyme or parsley) for garnish (optional)

Instructions  for cooking sous vide scallops

Step:-1 Preheat your sous vide water bath to 122°F (50°C) for medium-rare scallops or adjust the temperature based on your desired doneness.

Step:-2 Rinse the scallops under cold water and pat them dry with paper towels. Make sure to remove any side muscles or debris.

Step:-3 Season the scallops with salt and pepper on both sides. You can add additional spices or herbs as per your taste.

Step:-4 Place the seasoned scallops in a vacuum-sealed bag or a ziplock bag, making sure they are in a single layer and not over each other. Add a drizzle of virgin olive oil to the sealer bag to help with heat transfer and flavour.

Step:-5 Seal the bag using a vacuum sealer or the water displacement method (slowly lower the bag into the water, allowing the water pressure to push out the air, then seal the bag just before it's completely submerged).

Step:-6 Submerge the bag with scallops into the preheated water bath, ensuring they are fully submerged. Use a Sous vide clip or a heavy utensil to keep the bag submerged if needed.

Step:-7 Cook the scallops in the sous vide water bath for about 30 minutes. Cooking times may vary depending on the size of the scallops, so adjust the time as per the size of the scallops.

Step:-8 Once the cooking time is finished, remove the bag from the water bath and carefully take out the scallops.

Step:-9 Heat a skillet over high heat with a bit of olive oil. Sear the scallops for about 30 seconds to 1 minute per side until they develop a golden brown crust. Be careful not to overcook them during this step.

Step:-10 Plate the scallops, garnish with fresh herbs if desired, and serve immediately. You can squeeze lemon juice over the scallops for added flavour.

Enjoy your perfectly cooked scallops as a main dish or as part of a delicious seafood recipe!

Why Sous Vide Scallops?

There is no better weapon than sous vide. Sous vide cooking is an excellent method for cooking scallops because it allows for precise temperature control and ensures perfectly cooked scallops with a tender and buttery texture.

The Following are some reasons why sous vide is often used for cooking scallops:

Consistent result

Sous vide cooking guarantees consistent results every time. By setting the water bath to a distinct temperature, you can achieve precise doneness and avoid overcooking or undercooking the scallops.

Holds in moisture

Scallops are brittle and can easily become dry if cooked for too long or at too high a temperature. Sous vide cooking at a lower temperature helps retain the moisture and natural juices of the scallops, resulting in a moist and succulent texture.

Even cooking

With Sous vide Cooking technique, the scallops are cooked completely evenly. The water bath provides gentle and uniform heat distribution, ensuring that each scallop is cooked with the same level of doneness.

Tender and buttery texture

Sous vide cooking produces scallops with a tender and buttery texture. The controlled cooking temperature helps break down the proteins gently, resulting in a melt-in-your-mouth experience.

Minimal shrinkage

Traditional cooking methods like pan-searing can cause scallops to shrink and lose their plumpness. Sous vide cooking helps preserve the natural shape and size of the scallops, enhancing their presentation.

Enhanced flavour infusion

Sous vide allows for flavour infusion during the cooking process. By adding seasonings, herbs, or aromatics to the sous vide bag along with the scallops, the flavours have time to infuse and enhance the taste of the scallops.

Convenience and timing

Sous vide cooking is convenient, as you can set the temperature and cooking time, then walk away while the scallops cook. This frees up your time to prepare other components of the dish or attend to other tasks.

Remember that scallops cooked sous vide could look different from those prepared using conventional techniques like grilling. Although they might not have the same golden crust, they will still have a delicate texture that many scallop lovers enjoy.

Overall, sous vide cooking is a great method for preparing scallops since it guarantees consistent doneness, softness, and flavour. This is a fantastic technique to make your scallop meals stand out and impress your guests with precisely grilled seafood.
