Basic Ingredients to be used for cooking scallops

  1. Fresh sea scallops, Side muscles removed
  2. Salt and pepper
  3. Virgin Olive oil
  4. Lemon wedges (optional)
  5. Fresh herbs (such as thyme or parsley) for garnish (optional)

Instructions  for cooking sous vide scallops

Step:-1 Preheat your sous vide water bath to 122°F (50°C) for medium-rare scallops or adjust the temperature based on your desired doneness.

Step:-2 Rinse the scallops under cold water and pat them dry with paper towels. Make sure to remove any side muscles or debris.

Step:-3 Season the scallops with salt and pepper on both sides. You can add additional spices or herbs as per your taste.

Step:-4 Place the seasoned scallops in a vacuum-sealed bag or a ziplock bag, making sure they are in a single layer and not over each other. Add a drizzle of virgin olive oil to the sealer bag to help with heat transfer and flavour.

Step:-5 Seal the bag using a vacuum sealer or the water displacement method (slowly lower the bag into the water, allowing the water pressure to push out the air, then seal the bag just before it's completely submerged).

Step:-6 Submerge the bag with scallops into the preheated water bath, ensuring they are fully submerged. Use a Sous vide clip or a heavy utensil to keep the bag submerged if needed.

Step:-7 Cook the scallops in the sous vide water bath for about 30 minutes. Cooking times may vary depending on the size of the scallops, so adjust the time as per the size of the scallops. 

Step:-8 Once the cooking time is finished, remove the bag from the water bath and carefully take out the scallops.

Step:-9 Heat a skillet over high heat with a bit of olive oil. Sear the scallops for about 30 seconds to 1 minute per side until they develop a golden brown crust. Be careful not to overcook them during this step.

Step:-10 Plate the scallops, garnish with fresh herbs if desired, and serve immediately. You can squeeze lemon juice over the scallops for added flavour.
