Sous vide pumpkin soup is a delightful dish, perfect for warming up during the cooler months. The precise cooking time may vary depending on the size and tenderness of the pumpkin, so adjust accordingly.

Preparing soup can never be imagined preparing by Sous vide technique.   • 1 small pumpkin (about 2-3 pounds)
  • 1 small white onion, chopped
  • 2 cloves of garlic, minced
  • 2 cups of  vegetable or chicken broth
  • 1 cup coconut milk
  • 1 stem chopped lemon grass-only white part (optional)
  • 1 teaspoon shrimp paste (Optional)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 or 2  Chopped Small Red chillies
  • Salt and pepper to taste
  • Optional toppings: toasted pumpkin seeds, a drizzle of coconut milk, chopped parsley.

Equipment:

  • Sous vide immersion circulator
  • Sous vide container or large pot
  • Sous vide bags or vacuum-sealed bags
  • Blender or immersion blender
  • Cooking thermometer

Instructions to prepare delicious Pumpkin Soup

Step:- 1  Preheat your sous vide machine to 183°F (84°C). The mentioned temperature will ensure that the pumpkin cooks properly and becomes soft and tender.

Step:- 2 Begin preparing the pumpkin. Cut off the top and bottom, then slice the pumpkin in half. Scoop out the seeds and fibrous interior using a spoon or an ice cream scoop. 

Step:- 3 Remove the skin using a knife or vegetable peeler from Pumpkin. Cut it down into cubes, ensuring they are of similar size for even cooking.

Step:- 4 Take a sous vide bag or a vacuum-sealed bag and add the pumpkin chunks, lemongrass, shrimp paste chopped onion, and minced garlic to it also add the vegetable or chicken broth, coconut milk, ground cinnamon, ground nutmeg, salt, and pepper to the bag.

Step:- 5 Seal the bag using the water displacement method. Slowly lower the bag into a container filled with water, allowing the water pressure to push out the air. Once most of the air is removed, seal the bag just above the waterline. Alternatively, if you have a vacuum sealer, use it to vacuum seal the bag.

Step:-6 Submerge the sealed bag in the preheated water bath, ensuring that the bag is fully submerged. Use a sous vide container or a large pot to hold the water and secure the immersion circulator according to the manufacturer's instructions. 

Step:-7 Cook the pumpkin mixture for 2-3 hours. The goal is to have the pumpkin soft and easily mashed. The cooking time can be changed as per the size and tenderness of the Pumpkin.

Step:- 8 After the cooking time is complete, Remove the bag carefully from the water bath and set it aside momentarily.

Step:- 9 Preheat your blender or prepare an immersion blender. Open the bag and transfer the cooked pumpkin mixture to the bowl and blend or use an immersion blender directly in the bag.

Step:- 10 Blend the mixture until the mixture becomes properly smooth and creamy. Be cautious when blending hot liquids to prevent splattering. You may need to blend in batches depending on the size of your blender.

Step:- 11 Once it gets an even texture taste your soup and add the seasoning as per the need. Add more salt, pepper, ground cinnamon, or ground nutmeg as per your taste preferences.

Step:- 12 Once the soup is seasoned to your liking, pour it into bowls for serving.

Step:- 13 Serve the sous vide pumpkin soup hot and enjoy its creamy, flavorful goodness by topping toasted pumpkin seeds, a drizzle of coconut milk, chopped parsley
