Ingredients:

  • 2 pounds (900g) pork shoulder, cut into chunks
  • 1/2 cup soy sauce
  • 1/2 cup vinegar (preferably cane or white vinegar)
  • 1/2 cup water
  • 1/4 cup brown sugar
  • 6 cloves garlic, minced
  • 1 teaspoon whole black peppercorns
  • 3 bay leaves
  • Salt, to taste
  • Cooking oil for searing Steamed rice, for serving

How to cook Pork Adobo: A Stepwise Cooking Guide?

Step:-1 Prepare the pork 

Firstly, You have to Season the pork cubes with salt and pepper to taste. Place the pork in a zip-top bag, ensuring they are in a single layer & No Upside down layers are touched with each other.

Step :2 Create the Adobo Marinade

Secondly, Take a bowl in it and combine soy sauce, white vinegar, minced garlic cloves, bay leaves, black peppercorns, and brown sugar. Whisk well to dissolve the sugar and mix the flavors in adobo.

Now, Pour the adobo marinade into the bag with the pork, making sure the meat is fully submerged. Seal the bag using a vacuum sealer or the water displacement method.

Step :4 Preheat the sous vide water bath

Fill a large pot or sous vide container with water, and attach your sous vide cooker. Set the temperature to 155°F (68°C) for a tender result with a touch of pink or 165°F (74°C) for a fully cooked texture.

Step :5 Cook the pork adobo

Make sure you have to carefully place the sealed bag into the water bath, ensuring it is fully submerged. Clip the bag to the side of the pot to prevent it from floating. Cook the pork for 8 to 12 hours, allowing the flavors to infuse and the meat to become tender.

Step :6 Finishing touches

 Once the cooking time is complete, carefully remove the bag from the water bath. Transfer the pork to a plate and strain the adobo sauce into a separate bowl, discarding the bay leaves and peppercorns.

Step :7 Sear the pork 

This is an optional step you can do for an extra layer of flavor and texture, you can sear the pork. If you are willing Heat a skillet over high heat and add the vegetable oil. Once hot, sear the pork on all sides until nicely browned. Set aside.

Step:8 Reduce the adobo sauce

In a saucepan, pour the strained adobo sauce and bring it to a simmer over medium heat. Allow it to reduce by half, stirring occasionally, until it thickens slightly.

Step :9 Serve and enjoy:

Place the pork adobo on a serving platter or individual plates. Drizzle the reduced adobo sauce over the pork and serve with steamed rice. Garnish with chopped green onions or fried garlic for an added touch.
