- 2 lbs of chicken wings
- 2 tablespoons of your favorite chicken wing seasoning
- 2 cups of all-purpose flour
- 2 cups of buttermilk
- Vegetable oil, for frying
- French fries
- Ranch or Blue cheese dressing
Preheat your sous vide water bath to 150°F (66°C). Season the chicken wings with the chicken wing seasoning and place them in a vacuum seal bag or a Ziploc bag.
Seal the bag using a vacuum sealer or the water displacement method, removing as much air as possible. Place the sealed bag in the preheated water bath and cook for 2 hours. Remove the wings from the bag and pat dry with a paper towel.
In a shallow dish, combine the flour and chicken wing seasoning. In another shallow dish, pour the buttermilk. Dip the wings in the buttermilk, then coat them in the flour mixture, pressing the flour mixture onto the wings to adhere.
Heat the vegetable oil in a deep fryer or a large pot to 350°F (177°C). Fry the wings in batches for 8-10 minutes or until golden brown and crispy. Remove the wings from the oil and drain them on a paper towel-lined plate.
