Next, you need to prepare spice seasoning to add flavour to your chicken breast. For the smoke chicken breast recipe, you'll need a mix of dry ingredients that you can easily get from your nearest grocery store. Create homemade seasoning by mixing: 

  • Brown sugar
  • Smoked paprika
  • Garlic powder
  • Onion powder
  • Cajun

5-Step Guide: How to Cook Smoked Chicken Breast at Home 

Here's a step-by-step guide for our smoked chicken breast recipe. Follow it through to cook a tasty chicken meal with homemade seasoning.

Step#1: Preheat Your Charcoal Grill Smoker

The first step is to get things heated! Prepare your smoker to cook the chicken perfectly. Turn the heat on and let the smoker preheat for a while on medium heat at about 225°F.

If using a charcoal grill or a propane gas smoker, you'll need lots and lots of wood chips and a large water pan. However, if you're using a pellet smoker, you must pay close attention to its chambers. They must be full of wood pellets at all times.

Step#2: Prepare the Dry Seasoning Mix

Before we move toward the chicken, let's prepare our special homemade seasoning. For making smoked chicken, you need to prepare a dry mix of different spices and herbs.

Take a small bowl and add light brown sugar in it as a base to add some sweet undertones. Now, add smoked paprika and Cajun, that majorly intensifies the flavours. To balance it accordingly, add onion powder, dried oregano, thyme, and some garlic powder. 

Lastly, add the remaining ingredients, i.e., seal salt, black pepper, and white peppers (freshly-crushed), to add a unique layer of flavour.

Mix all the dry ingredients in a bowl and stir it thoroughly before setting it aside.

Step#3: Prep the Chicken Breast 

While your smoker is on medium heat, use this time to dry your chicken breast. You can use paper towels or butter papers to pat each piece of the chicken breast dry. This helps to remove any excess moisture that may disturb your cooking later.

After thoroughly drying your chicken, it's time to rub the seasoning. Use a brush or spoon to coat your chicken breast lightly with oil. Add a pinch of natural salt over it and spread it around for quick absorption.

Now, it's time to make the chicken swampy with dijon mustard. Coat the breast with mustard and dip it in the bowl of seasoning. Move it around and cover each side generously with the dry seasoning putting slight pressure from all sides.

Step#4: Cooking Time 

Once seasoned to perfection, it's time to cook your chicken breast. Check if the smoker is nice and ready. Place your chicken breasts onto the charcoal grill. You'll see it simmering. 

Let it sit there being cooked to perfection before you move on to the next one. You don't necessarily need to flip it over and over again since you're smoking meat.

Step#5: Let it be Smoked! 

If you think the chicken is ready, check the internal temperature using the kitchen thermometer. Make sure to close the lid, or the smoke will get away. 

Once the internal temperature becomes 165°F, draw your chicken breasts out of the smoker and let them sit for 3-5 minutes.

Slice the chicken breast using a sharp knife into small strips and serve it hot to your guests.
