EASY RECIPE TO COOK SOUS VIDE SMOKED CHUCK ROAST AT HOME - SUVI COOKING

INGREDIENTS AT A GLANCE

The smoked Chuck Roast recipe requires a few readily available ingredients. These include:

  • CHUCK ROAST (3 - 4 pounds)

  • SEASONING

Your Chuck Roast can go well with a variety of seasonings. You need to rub the seasonings generously onto your Chuck meat piece before placing it in the vacuum-sealing bag. We gathered some great seasoning ideas for you, as follows:

  • Kosher Salt with black pepper

PIECES OF EQUIPMENT

  • Suvi Sous Vide Machine is necessary to make any of your Sous Vide recipes at home. It is required to maintain the optimum temperature within the water bath according to your recipe. In our Sous Vide Chuck Smoked Roast recipe, the basic requirement is 133 °F / 56.1° C.
  • A reusable Vacuum sealing bag is also part of the Suvi Bundle. It is required to keep the Chuck meat sealed and packed within it, to keep freshness and taste intact.
  • A Sous Vide container will be used to keep the vacuum-sealed Chuck Roast inside the water bath. 
  • A smoker will be used to smoke the Chuck Meat piece after cooking it.
  • Lastly, a skillet/grilling pan would be required to sear your Sous Vide Chuck Roast to perfection.

STEPS FOR COOKING

We will now explain the Sous Vide Smoked Chuck Roast recipe, in a very easy, step-by-step method. This will allow you to create the Smoked Chuck Roast according to your choice and taste.

The steps to create a scrumptious Sous Vide Chuck Roast are:

1.SEASON THE CHUCK MEAT

Firstly, you have to season the Chuck Roast as soon as you bring it home. We have already suggested several seasoning ideas. It can vary from salt to a mixture of spices.

You should start from one end of the meat piece and move your hand to the other. You need to keep on adding a tablespoon of seasoning each time that it finishes so that every part of Chuck meat tastes exquisite. Experts suggest a seasoning/marination time of 24 hours, which will allow the spices to penetrate the deepest layers of meat. However, it is not a compulsion. 

2. SOUS VIDE THE CHUCK MEAT

Now, it's time to seal and pack your seasoned Chuck meat into a vacuum bag. You can also add a tablespoon of oil or butter to the vacuum bag to enhance the final product's taste. Set the temperature of the Suvi Sous Vide machine at 133 °F/ 56.11 °C and insert it into the Sous Vide container, which bears the water bath. Now add the vacuum-sealed bag, containing Chuck meat, to the water bath. The Sous Vide machine will give continuous heat to water which will cook your Chuck meat thoroughly. The cooking time of Sous Vide Chuck meat spans from 24 to 36 hours, which depends on the size of Chuck meat. It is also advised to keep changing the sides of the Chuck meat regularly so that none of the sides turn hard on the outside.

3. SMOKE THE SOUS VIDE CHUCK MEAT

If your Chuck meat is cooked in 36 hours, bring it out of the vacuum-sealed bag for the next step. To add smoke and Bar BQ effect to the meat, set your smoker to 200 °F / 93.33 °C. Add the Chuck meat into the smoker and let it cook again for a good 1 hour until the meat changes its colour. After this step, you will have perfect Sous Vide Smoked Chuck meat ready to be seared.

4. SEAR THE SMOKED SOUS VIDE CHUCK MEAT

Well, if your Sous Vide Smoked Chuck is cooked and smoked, then it's time to add a bit of sizzle to your meat. Put 1 - 2 tablespoons of oil to a skillet pan and let it heat up. Now, put your cooked Chuck meat piece directly into the oil and let it roast until it becomes crispy on the outside. If you want to enrich the aroma and taste, you can add seasoning again to smoked Chuck meat before roasting it.
